Today is my anniversary and I am wishing we were in Puerto Rico having dinner at El Veradero so I could sip my very favorite drink--The Sunburn Painkiller-- by the water in the Puerto Chico marina.

El Veradero was the first place I found the "Painkiller" and OMG it was good. Then I discovered that history of the drink while sailing through the BVI.

So the Painkiller originated on the BV island of Jost Van Dyck at the beachside bar known as The Soggy Dollar. The Painkiller is a blend of Pusser's rum with 4 parts pineapple juice, 1 part cream of coconut and 1 part orange juice, well shaken and served over the rocks with a generous amount of fresh nutmeg on top.
It may be made with either two, three or four ounces of Pusser's dark rum--depending on your goal for the evening and the tolerance of your liver.

The original Painkiller was created in the 1970s by Daphne Henderson at the Soggy Dollar Bar at White Bay on the island of Jost Van Dyke in the British Virgin Islands. (FYI: Painkiller's are trademarked by Pusser's rum so to be a TRUE Painkiller it must be made with Pusser's anything else is just a copy---lol)!

So happy anniversary my dear husband---maybe we will make some Painkiller's for dinner tonight and dream of being at the marina!

The Recipe:
SERVES 1-2
2-4 oz. of Pusser's Rum
4 oz. pineapple juice
1 oz. cream of coconut
1 oz. orange juice
Grated fresh nutmeg

In a cocktail shaker filled with ice add first four ingredients and stir. Pour into cocktail glasses and top with grated nutmeg.
